veryone knows that cookies are really good for the soul. Sloane’s been so sick this past week with RSV and pneumonia. It’s so hard to see your little ones down and out with these sicknesses. We’ve been to urgent care once and the ER once. The poor thing has endured a lot this week and being sick just sucks so much. Not to mention if you’re this sick for this long it can get your spirits down. I wanted to do something that would cheer her up and give her a little bit of energy. Sloane’s favourite thing to do is craft. She also happens to love cookies - so I decided this would be a perfect combination for her. I made sugar cookies and we decorated them together. Are these the prettiest sugar cookies you’ve ever seen? Definitely not. I don't know how to ice a whole cookie. I have no idea what I'm doing wrong. But decorating these sugar cookies did fill Sloane's soul with happiness which I feel you can see here. These sugar cookies also happen to be my husband's favourite - they are his mom's recipe and I didn't dare attempt to make them gluten-free for fear of disappointment LOL!

Sugar Cookies

Makes 24 cookies
 
Ingredients
  • 3/4 cups butter
  • 1 1/4 cups granulated sugar
  • 2 eggs
  • 2 tsp vanilla 
  • 3 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt 

Instructions

  1. In a large bowl, cream butter, sugar, eggs, and vanilla until the mixture is light and fluffy.
  2. Combine flour, baking powder, and salt to your butter mixture and mix until just combined.
  3. Chill in the fridge for a minimum of 30 minutes
  4. Preheat your oven to 375F
  5. Lightly flour your counter and roll out your dough so about 1/4 inch thickness. 
  6. Use your cookie cutters, cut into shapes and add it to a baking sheet. 
  7. Bake for 7 minutes,
  8. Let cool then decorate (icing recipe below)

Sugar Cookie Icing Recipe

Makes enough to ice 24 cookies

Ingredients

  • 2 tablespoons butter, melted
  • 1 1/2 cup confectioner’s sugar, sifted
  • 2 tablespoon milk
  • 1 teaspoon vanilla (or more, Sloane did more and it was great)
  • 1/2 teaspoon lemon juice
  • Food colouring

Instructions

  1. Combine ingredients (except food colouring) in a bowl using an electric mixer. 
  2. Evenly split your icing based on how many colours you want.
  3. Add a few drops of food colouring, mix and decorate your cookies!
  4. Enjoy!
