Gluten-Free Chocolate Chip Skillet Cookie

It has been a minute since I’ve done a skillet recipe, and I don’t want to brag, but this gluten-free chocolate chip skillet cookie is the BEST cookie I’ve ever, ever, EVER made. I think it’s the most perfect skillet recipe to be sharing for Valentine’s Day.

This isn’t just my opinion – I brought in a cookie expert to verify this fact. The expert might be my husband, but he is filled with strong opinions on sweets. When it comes to biases towards his wife, he has no issue telling the truth about how food tastes – which is very helpful when releasing a new recipe to the world.

Needless to say, he couldn’t believe this was gluten-free, nor could he stop eating it.

No judgment from me; I couldn’t stop eating it either. We luckily forced Sloane to stop eating it because she is the only one we have willpower for (also, she’s too short to reach the cookie independently, which was advantageous).

My last skillet recipe was this hazelnut brownie bar, and while it was good, this gluten-free chocolate chip skillet cookie blows it out of the water.

I’ve already heard a request to make it again this weekend. For context, this gluten-free chocolate chip skillet cookie was gone in 24 hours – we absolutely need some separation from this recipe. Still, I also must obey the request… I’ll just toss some kale or something similar to the dinner mix so that I can balance this out!

Anyways, this gluten-free chocolate chip skillet recipe is a perfect addition to your Valentine’s menu. It’s an enjoyable activity you can do together as a family with an excellent reward at the end of it all.

For this recipe, I peeked at three different gluten-free chocolate chip recipes. Now that I’m reviewing them, they all claim to be “the best.” I’m going to toss my hat in the ring for “the best” gluten-free chocolate chip cookie because I took all of the most delicious pieces from each of these recipes. Here they are, My Gluten-Free Kitchen, Meaningful Eats, and Butternut Bakery.

I would also claim this is the best gluten-free chocolate chip cookie because it’s also a gluten-free chocolate chip skillet cookie. And can never go wrong with a skillet cookie.

P.S. – I told you this before, but I LOVE my Kana Pan and the fact it can go into the oven. Plus it cooks perfectly evenly.

Gluten-Free Chocolate Chip Skillet Cookie

Makes one ten-inch chocolate chip skillet cookie or, 24 regular cookies

Ingredients

+ 1/2 cup margarine, room temperature

+ 2 tbsp cream cheese, room temperature

+ 1/2 cup brown sugar

+ 1/2 cup white sugar

+ 1 tbsp vanilla

+ 1/2 tsp baking soda

+ 1/2 tsp salt

+ 1 egg

+ 1 and 1/4 cup of gluten-free flour

+ 1/2 cup almond flour

+ 1 tsp xanthan gum (particularly necessary if your GF flour blend doesn’t have any)

+ 1 cup chocolate hearts (or chips if you’re not going for Valentine’s theme), plus a few extra to sprinkle on top

+ Flaky sea salt

+ Vanilla Ice Cream (for serving)

Instructions

1. Preheat oven to 375 °F. Line your ovenproof skillet with a parchment round, and spray with oil (or brush, a thin layer of oil if you don’t have the spray).

2.  In a large bowl, combine margarine, cream cheese, brown sugar, and white sugar until it is silky smooth. I used an electric hand mixer to achieve this.

3. Add your vanilla, baking soda, salt, and egg. Mix well.

4. Combine your gluten-free flour, almond flour, and xantham gum. Mix well.

5. Add your chocolate chips/hearts until just combined

6. Scoop your batter into your skillet and spread it out evenly.

7. Bake for 25 minutes (or until a toothpick comes out clean from the centre). If you’re making cookies, I would give these 8 minutes (but check them frequently – as soon as they hit a perfect golden brown, pull them).

8. Immediately after you remove the cookie, sprinkle with the flaky salt.

9. Wait for it to cool and add your ice cream (or don’t – instead, be pigs like us and serve with a side of ice cream).
