I know I'm late to the game in sharing what my favorite COVID-friendly must haves are, but better late than never, right?! Despite the obviously in nothing about 2019 - aside from a beautiful baby girl, of course - or 2020 going to plan for me, COVID honestly hasn't changed our day-to-day all that much. Sloane had to be a bubble baby for health reasons - hence, my 2019 not going to plan - and it wasn't until right when COVID hit that she was cleared to hang out with other kids and live a normal life. But that's a story for another time. Impeccable timing though, right?! One of the main things COVID has done for me is heightened my sensitivity around how germs travel and has affirmed how dirty I think most things are. I was already hyper-sensitive to everything but now I truly second guess touching everything, and I cannot get enough hand sanitizer when we are out. Despite using an excessive amount of hand sanitizer, I will still wash my hands right when I get home, too - the professionals told me it is best!

This post is a labor of love. There are so many trials and errors that have come with developing a recipe for gluten free pizza crust—more errors along with my trials than I care to admit. However, this recipe for gluten free pizza crust is a win for me. It's super simple, with limited ingredients, it's not chewy but also not crunchy. It's that perfect in-between that you're searching for with a pizza.

Time and time again, I talk about how much I dislike breakfast, yet here I am creating another breakfast recipe! So far, we have granola breakfast bowls, tropical smoothies, and banana muffins (questionable on the healthy breakfast front). You all inspired it through your Instagram voting, though, so I hope these are bringing some light into your kitchen in the mornings. Plus, if I'm being honest, this apple pancake recipe NEEDS to be shared with you. I would eat these all day, every day.

Are you a coffee drinker or a tea drinker? I am personally a tea gal, myself.  Tea time happens in this house pretty much all morning. Between chasing around a toddler and trying to get basic things done, my tea gets re-heated about five times. By about noon, once Sloane is down, I finish my tea. It certainly isn't the most ideal way to polish off a tea, but hey, at least it gets consumed at some point. Before Sloane, tea time was a significant ritual for me. I loved going to a local coffee shop and picking up a delicious tea latte. There's something about that paper cup that makes me happy. 

Everybody, and I mean everybody, needs to try chimichurri on steak if you haven't already (I sincerely hope you have!). If you don't eat steak, then no problem, I have ALL the suggestions below. I wasn't confident I was a fan, but, as she is supposed to do, my mom forcefully "suggested" I try it. So I did, and I loved it. Why is it moms are always right?! ...

Personally, I am not a veggie person. Are you? Full disclosure, if you are, this might not be the space for you. Kidding! Sort of. I always find ways to incorporate veggies where I can. While I'm not a veggie person, I am a pasta person. Enter this kale pasta. It forces me to get my veggies, but I'm in my happy place, eating pasta.

...Anyways, back to packing, it takes me a long time, I won't pretend it doesn't. It's strange to have to pack for a little minion who can't fend for herself. I always feel like I'm going to forget something crucial for her. So I start tossing things into the spare bedroom early. I am also super particular (haha, seriously, if you don't know me, you'll start to understand that through this blog), so I start packing for a trip in such a way that it minimizes my stress while I'm away. With the goal of actually enjoying myself on holiday and not creating work! So this week, I'm sharing my best tips for packing for a trip that involves minimal unpacking, repacking, and then unpacking again. Confused? Follow along with me, and you'll see what I mean.

Whenever my mom visits, she always makes him a big batch of hers so he can enjoy it. Well, as I mentioned before, she is in town, but is in quarantine, so she cannot currently be making him some potato salad. In all honesty, she probably won't be making it for herself either.  Like a nice wife and daughter that I am, I decided to make a new version of vegan potato salad, using my mom's ingredients.
