et's be honest—I'm all for getting my greens in... in theory. But in practice, I would rather have a block of aged cheddar. So I'm getting resourceful with my consumption of greens and going for a green juice instead. Hey, at least I'm putting the effort in, right?! In fairness, I didn't know how long this effort would last. So, instead of spending a fortune on a juicer, I found a way to enjoy a refreshing, nutrient-packed green juice without the need for a fancy juicer. For the record, the effort has lasted almost four months. That's right - go me!!
Green Juice Ingredients
*makes approximately 4 juices
- ½ a ripe pineapple, peeled and cut to fit in the blender
- 1 cucumber, chopped-ish so it fits in the blender
- 4 celery sticks, chopped-ish so it fits in the blender
- Juice of 1 lemon
- 2 cups spinach
- A generous chunk of fresh ginger (adjust to taste)
- 1 cup water
Green Juice Instructions
- Place all the ingredients into your blender.
- Blend until smooth.
- Place a nut milk bag over a large bowl or pitcher.
- Pour the blended mixture into the bag.
- Gently squeeze the bag to extract the juice, leaving the pulp behind.
- Pour the juice into glasses and enjoy.
