npopular opinion: breakfast is not my favourite. My husband and daughter, on the other hand, are breakfast fiends. If you want to win my heart, which can be won over through my stomach, you should go for a delicious gluten-free pasta. If you're dead set on breakfast only, this perfect gluten-free granola will work. Some of my best girlfriends proved that when they dropped off a version of this granola when I was a few days postpartum with Sawyer. I was so obsessed with it that I've continued to make the granola and refine it every week since.
A Healthy Granola That Tastes Like Crumble
I already have a very epic gluten-free granola recipe. It does require a solid half cup of butter, which is why I love it so much, but this version rivals that one and requires no butter. The original recipe was adapted from one of Monika Hibb’s cookbooks. My girlfriends didn’t follow her recipe exactly, and I have continued to modify it more. Firstly, my husband despises coconut. So the coconut has been omitted. Extra items like chia, hemp, and flax seeds are now incorporated to keep you satiated in the morning. My entire family also loves this perfect gluten-free granola. They told me it tastes like crumble – which, if you know me, you know is my favourite thing ever.
Perfect Gluten-Free Granola Ingredients
Makes ~ 6 cups
- 3.5 cups old-fashioned oats (ensure GF, if necessary)
- 1 cup pecans – I crush up pecan halves into smaller pieces
- 1 cup pumpkin seeds
- 3 Tbsp chia seeds
- 3 Tbsp hemp seeds
- 3 Tbsp flax seed
- 1 cup oat flour
- 1/4 cup packed brown sugar
- 1 Tbsp cinnamon
- 3/4 tsp sea salt
- 1/2 cup avocado oil
- 1/2 cup maple syrup
- 2 Tbsp honey
- 2 tsp pure vanilla extract
Perfect Gluten-Free Granola Instructions
1. Preheat the oven to 350° F.
2.
- In a large bowl combine oats, pecans, pumpkin seeds, chia seeds, hemp seeds, flax seeds, oat flour, brown sugar, cinnamon, and sea salt.
- In a small bowl, mix the avocado oil, maple syrup, honey, and vanilla extract. *Most weeks I am lazy and combine directly with the dry ingredients. It works fine, mix it well!
- Lay your granola in a thin layer on your baking sheet – I find you need two baking sheets for the best, even, and crunchy bake.
- Bake for 11 minutes, stir it up, rotate sheets, flatten it back out, and bake for another 11 minutes. You want a beautiful golden brown colour, but we can go from brown to burnt pretty quickly so keep an eye on it at the end.
- Remove from the oven and let cool fully. Break up your clusters and eat up in any way you see fit! My favourite combination is raspberries, granola, and Greek yogurt. McGregor and Sloane go milk and granola!
Is everyone banana breaded out?! I wanted banana bread, but I was pretty sick of seeing and making e
Time and time again, I talk about how much I dislike breakfast, yet here I am creating another break
All of this to say: doesn't going to a cabin or camping always remind you of making s'mores as a kid
